Ingredients
- 2 large sweet chillies
- 2 large white potatoes
- 4 cloves garlic
- 1 small onion
- Juice of 1 small lime
- 1 sprig fresh coriander
- Salt and pepper to taste
- 1 egg
- 100g flour
- 100ml vegetable oil
Method
- Boil and mash potatoes, add coriander, lime juice, onions, garlic, salt and pepper.
- Cut sweet chillies in half, clean, rinse and char over open flame.
- Fill chillies with potatoes.
- Seal chillies closed with toothpicks.
- Dip chillies in beaten egg and then dip in flour.
- Fry chillies in olive oil until brown and crispy.
