Ingredients

  • 8 sprigs fresh mint
  • 4 fresh peaches
  • 400 g rocket, or lettuce of your choice
  • 80 ml olive oil
  • 60 ml balsamic vinegar
  • 4 cloves garlic
  • Salt and pepper to taste

Method

  1. Cut peaches into thick wedges and coat with olive oil and balsamic.
  2. Chop herbs and garlic roughly.
  3. Fry peaches in pan on medium-high heat until edges are crispy.
  4. Toss fried peaches with herbs and rocket. 
    Makes one medium sharing bowl.
