Ingredients

  • 4 large potatoes (grated)
  • 1 large leek (cut, cleaned and chopped finely)
  • 2 cloves garlic
  • 3 eggs
  • 1/4 cup grated mozzarella
  • Fresh chopped herbs (basil, mint and thyme)

Method

  1. Combine finely chopped leek, garlic and herbs with grated potatoes, eggs and cheese.
  2. Fill muffin tin compartments until 3/4 full.
  3. Bake at 190 C for 30-35 minutes until golden brown and crispy on top.
  4. Makes 12
