Ingredients
4 large
potatoes
(grated)
1 large
leek
(cut, cleaned and chopped finely)
2 cloves garlic
3 eggs
1/4 cup grated mozzarella
Fresh chopped herbs (
basil
, mint and thyme)
Method
Combine finely chopped leek, garlic and herbs with grated potatoes, eggs and cheese.
Fill muffin tin compartments until 3/4 full.
Bake at 190 C for 30-35 minutes until golden brown and crispy on top.
