Ingredients
10-15 large romaine
lettuce
leaves
Cooked red kidney beans (or your choice of beans)
1 medium onion
2 medium
carrots
2 medium
tomatoes
3 sprigs fresh
coriander
1 sprig fresh mint
1 small lime
2 large avocados
Salt
Method
Wash and separate lettuce
Shred carrots, chop onions,tomatoes, coriander, mint and avocados roughly.
Squeeze lime juice over avocados and salt to taste.
Fold beans and other ingredients into romaine leaves and eat like tacos.
Makes 10 to 15
