Ingredients
- 2 large cucumbers
- 2 avocados
- 2 small roma tomatoes
- 1 small onion
- 8 cloves garlic
- 2 fresh sprigs coriander
- Juice from 2 small limes
- Salt and pepper to taste
Method
- Slice cucumbers as thin as possible, length-wise.
- Mash avocados and chop tomatoes, onions, garlic and coriander finely.
- Mix avocados, tomatoes, onion, garlic, coriander, lime juice, salt and pepper together.
- Dollop avocado mixture onto slices of cucumbers, roll up and stick toothpicks in to hold rolls.
- Chill and serve.
