Ingredients
- 1 large bunch of celery,
- 1 onion,
- 20 g butter,
- 1 leek,
- 4 cups chicken stock,
- 4 cloves of garlic,
- 2 bay leaves,
- 1/4 cup of cream,
- salt and pepper to taste.
Method
1. Remove celery leaves and roughly chop.
2. Cook celery slices, onion and leek in butter until soft, then add garlic.
3. Add chicken stock and bay leaves, and cook on medium heat until celery is soft. Reduce heat and simmer for 15 mins.
4. Let soup cool slightly before adding cream and serving.
Note - Once cooked, use blender once soup has cooled to achieve a smooth consistency.
